



- 12 chicken bits (the ones you like in the chicken, ask your butcher)
- 1Kg small potatoes, cleaned and sliced (I’ve used the ‘rattes du Touquet’)
- 2 organic lemon, washed and cut into quarters
- 1 cup stoneless green olives
- 1 garlic head with unpeeled garlic cloves
- olive oil
- salt and pepper
Recipe:
- Preheat your oven to 300°F
- In a large oven dish, add some olive oil (enough to slightly cover the bottom). Add the chicken parts and roll them into the olive oil
- Add the potatoes, the lemons, the olives, the garlice cloves and finish with salt and pepper
- Let the chicken roast for 1h45 and regularly moist the meat with its own juice
- You can finish up with a few minutes grill mode if you wish before serving
