
- 2 middle size peaches, stoneless and quartered
- 2 large handful rucola
- 1 large handful rucola
- 4 Parma ham slices
- 2 tbsp organic olive oil
- 1 tbsp balsamic vinegar
- salt and pepper
Recipe:
- Preheat your oven to 300°F. Place the peaches in a dish oven proof and let them cook till they are tender
- Before retrieving them from the oven, roast them under the ‘grill’ mode, till they are slightly golden
- Place two Parma ham slices between two sheets of paper towel and then between two plates. Place the plates in your microwave and cook the slices for 1 minutes. The slices are going to dry and be grilled without any oil !
- Cut the grilled slices into thin strips. Set aside
- Prepare your ‘vinaigrette’ by mixing oil and vinegar
- In you serving plates, place the rucola, the raw Parma ham and the roasted peaches. Top with chopped mint and ham strips. Drizzle with ‘vinaigrette’ and season to taste before serving
